Food & Beverage Studies

Food Studies is for any student working in or studying a topic that has a relationship to food - agriculture, food distribution, social work, maternal and infant health, economic and political stability, peacebuilding, transportation, conservation, global health, and many more. UWM's program does not focus on food preparation or culinary arts but provides value for individuals in food service who want to understand the impact of food and nutrition in our society and in places around the globe.

Students take courses in nutrition and health sciences to explore the effects of food on our physical and mental well-being as well as liberal arts coursework in history, anthropology, and foreign cultures to develop a deeper understanding of the culture, identity, costs, distribution, infrastructure, scarcity, and politics surrounding food.

Food & Beverage Studies Courses

FOODBEV 101 Introduction to Food Studies

3 cr. Undergraduate.

Ways in which food affects health; health 'crazes;' systems of food distribution and economics; ethical and environmental issues; food as a symbol for social distinction.

Prerequisites: none.

FOODBEV 102 Taste: The Culture and Science of Fermentation

3 cr. Undergraduate.

Fermentation as a cultural and scientific phenomenon; anthropological, historical, biological, chemical, and cultural aspects of fermentation process; roles of fermented foods and beverages in society.

Prerequisites: none.

FOODBEV 199 Independent Study

1-3 cr. Undergraduate.

Independent study under supervision of faculty or academic staff member. For further information, consult prog coordinator.

Prerequisites: 2.0 GPA; consent of instructor, program coordinator, and Assistant Dean for Student Academic Services.

Course Rules: Retakable to 3 cr max.

FOODBEV 289 Internship in Food Studies, Lower Division

1-3 cr. Undergraduate.

Application of basic principles of food studies in business, organizational, educational, political, or other appropriate setting.

Prerequisites: 2.50 gpa; cons supervising instr.

Course Rules: One cr earned for academic work based on 40 hrs in internship. Retakable to 3 cr max.
